So pretty and reasonably easy to make. Worth a try, especially if you usually buy the Tia Pablo corn tortillas. I think I might keep an eye out for a tortilla press next!
2 cups Masa Harina flour - you can buy this at the supermarket, I used Tio Pablo brand
1 cup water
1/2 cup roasted beetroot puree - I used leftover roast beetroot. I roasted beetroot in the oven in foil until tender, rubbed off the skin and blended until smooth
Place all ingredients in a bowl and combine until a dough forms, it should be a little tacky but not dry.
Cut into 10-12 balls.
Place each ball between two sheets of grease-proof paper and roll out.
Heat a skillet on a medium heat and cook for about 30 seconds on each side. Place in a tea towel to keep warm while you cook the rest. I found that they kept warm for quite a while and they steamed and went nice and soft.
Would make again! We ate them with steak, kimchi, sesame carrot salad and mayo
