I had some steak to cook this week and ended up whipping these up for a quick ish dinner. For old -mate-no-gluten-at-the-moment-Keeley I thinly sliced up some potatoes, tossed them in oil and salt and roasted them in a hot oven. I also kind of forgot about them and they got really crispy and the we all enjoyed them! I just made him a salad with the same ingredients and used the potatoes instead of the bread. You could use another root vegetable if you wanted too. Beets and parsnip would be nice or roast kumara or pumpkin.
I made a meat free version for lunch with a poached or fried egg instead of steak and a dollop of yoghurt instead of feta. I did think that some lemony herby puy lentils would be lovely too or some fresh mozzarella. Also use edamame beans instead of peas for an extra protein boost.
2 sirloin steaks (about 500-600g) or whichever steak you like
4 slices sourdough or do the potato version
4 large handfuls of rocket
2-3 onions caramelised
Broccoli pea pesto - below
Crumbled feta or shaved parmesan to top
chilli flakes if you like
Lemon juice to finish
Make the pesto below. This can be done in advance
Cook the steaks - there are lots of tips here
Rest the steak and then cook the onions in the same pan (or do in separate pan while the steaks are cooking, or do in advance)
Slice the rested steak and lightly toast the sourdough. Layer on some onions. Dollop on a generous amount of the pesto. Pile on lots of rocket and the top with the steak. Crumbled over a little feta or some shaved parmesan and squeeze over some lemon juice and some chili flakes.
Broccoli and pea pesto
1 head broccoli
1 cup peas or edamame beans
1 clove garlic
Zest and juice one lemon
30g grated parmesan or 1-2 tsp miso
Handful of fresh herbs - think parsley, coriander, rocket, mint
1/4 cup olive oil
1/4 cup toasted nuts or seeds - I used cashews
Bring a medium pot of water to the boil and season well. Cut the florets off the broccoli stalk and reserve that for a soup of stirfry. Cook the broccoli for 2-3 minutes or until tender and add the peas in for the last 20 seconds. Drain and refresh under cold water.
Add everything into a food processor or blender, season and blend until smooth. Adjust if needed.
