This is our go to bircher for busy mornings. The kids love it. The toppings change, depending on what is around too, they are nice for a bit of texture. Sometimes it’s just a few seeds or some toasted coconut.
Hemp hearts are nutritious hulled heart of the hemp seed that look a bit like sesame seeds, they are nutty and are a high quality protein containing omega 3 and 6 and are a great source of good fats. I like to sprinkle them on breakfast, on salads and add them to smoothies. Currently you can find them at organic grocers, health shops and online direct from the grower. Keep them in the fridge so they don’t go rancid.
Serves 4 but lasts for 2 mornings if you don’t eat it all the first morning.
1 ½ cups rolled oats (porridge oats)
½ cup fine coconut
2 apples, grated – I quite like a tart apple here
2 T chia seeds
1 ½ cup yoghurt
½ cup water
½ cup milk or coconut milk
2 T hemp hearts (optional)
1-2 T honey, apple syrup or maple syrup to taste
½ cup toasted coconut shavings
Half cup walnuts, toasted
Extra hemp seeds
Extra apple- finely sliced, milk and apple or maple syrup to serve
Place the oats, coconut, chia seeds, yoghurt, water, milk, hemp hearts and honey in a large bowl and mix to combine. Cover and put in the fridge overnight.
Toast the coconut shavings and walnuts and set aside
To serve divide into 4 bowls, top with the coconut shavings, walnuts and hemp seeds. Top with extra apple if you like and a little milk and or apple syrup.
