This salad kind of reminded me of a tabbouleh, it’s nice and easy , herby and fresh. It makes a good quick side or do what what we did and just add protein and avo to it, plus a great dressing and called it a meal.
Serves 3-4 as a side depending on what else you are eating with it
1/2 cup quinoa or millet (I used a mixture of both )or fine bulgur wheat would also work
1 large , broccoli head grated or finely chopped
1/4-1/2 block feta, crumbled
2-4 T more of chopped parsley
zest and juice of a large lemon
2 T extra virgin olive oil
Cook the quinoa/millet in plenty of boiling water for about 12 minutes or until it’s tender. Drain well in a sieve and cover with a tea towel to steam dry while you prep everything else.
Add in quinoa into a bowl and add the lemon juice, olive oil, grated broccoli, feta and herbs. Season well. Add more lemon if necessary.
We had this with crispy pan fried chickpeas, avocado, salad greens and some leftover chicken. I made a tahini dressing but the green goddess would be great or yoghurt and tahini mixed would also go down a treat.
