These potatoes are an umami flavour bomb. Seaweed is full of nutrients and we are surrounded by it. There are many varieties harvested in NZ. I used Pacific harvest brand. It is a little pricey but a little goes a long way. These were so good.
800-1kg new potatoes - I used rockets which are usually the first of the season
1 T seaweed flakes - I used dulse flakes but I think you could use any dried seaweed flake like karengo/wakame.
2 T toasted sesame seeds, lightly crushed if you can
1 tsp sesame oil
flaky salt to taste
chopped chives (optional)
Scrub the potatoes and cut if needed so they are all even in size Cover with cold water and season with salt. Bring to the boil and simmer until tender. Drain well.
Meanwhile, toast the sesame in a dry pan. Remove. Add butter and seaweed and sesame oil. Melt and infuse. Pour over the potatoes with half of the sesame seeds. I actually bashed my sesame seeds up a bit for some different texture. Season with flaky salt and serve. Top with extra sesame seeds. Yum!
We ate these with asparagus, herby white beans and an egg.
