A super simple and lovely way to eat asparagus. When the asparagus is super fresh I only chop off 1cm and then lightly peel the ends. If it’s a bit older I chop off about 4cm. You want the BBQ or grill plate nice and hot so that they cook quickly and stay green.
2-3 bunches of asparagus
olive oil and salt
1-2 slices of sourdough - I used an end
shavings of parmesan
a squeeze of lemon juice
Toss the prepped asparagus with olive oil and salt.
Place on a hot grill or BBQ and grill until charred and just tender.
Rip or cut up the bread into little pieces and toast in a pan with olive oil until crispy.
When the asparagus is cooked, place on a plate and sprinkle over the toasted crumb, shave over some Parmesan and finish with a squeeze of lemon juice. Easy.
